Tomato Soup
Ingredients
4 medium size tomatoes chopped,
1 small onion finely chopped,
1tsp sugar,2 cups water,
Salt to taste,
¼ tsp black pepper powder,
1 tsp butter (optional),
1tsp vegetable oil.
Method
1) Heat oil in a pressure cooker. Add the onions and sauté till light brown.
2) Add the tomatoes and fry for 3-4 minutes. Add salt while frying.
3) Add the water and close the lid of the pressure cooker and cook to 2 whistles. Let it cool down so that the vapor from the pressure cooker is automatically released. Don’t forcibly release the pressure.
4) Now blend this mixture and strain it.
5) Reheat this mixture in a sauce pan and add the sugar, pepper powder and butter. Heat the mixture to make a thick consistency.
6) Garnish with cream and serve hot with garlic bread.
Tomato RasamTomato Rasam
Ingredients for Rasam
4 medium size tomatoes chopped,
2-3 garlic cloves,
1 small onion finely chopped,
2 cups water for boiling,
1 green chilly,
1 tsp turmeric powder,
½ tsp mustard seeds,
Few curry leaves,
Salt to taste,
1tsp vegetable oil,
1tsp ghee (optional)

Tomato Rasam
Rasam Powder
Ingredients
2 whole red chillies,
1tsp cumin seeds,
1tsp mustard seeds,
2tsp coriander seeds
Method for making Rasam powder
1) Take a thick bottomed frying pan and add all the ingredients for rasam in it. Heat for 3-4 minutes till the aroma of the spices is released.
2) Grind this mixture to powder.
Method for making Rasam
1) Take a pressure cooker and add the tomatoes, turmeric powder, cloves, green chilly, salt along with 2 cups of water. Close the lid of the pressure cooker and boil for 2 whistles. . Let it cool down so that the vapor from the pressure cooker is automatically released. Don’t forcibly release the pressure.
2) Now open the lid of the pressure cooker and mash the tomatoes with the help of hand. Alternatively you can also puree the mixture and strain it.
3) Now heat a frying pan and add 1tsp of oil.
4) Add the mustard seeds and curry leaves. Once the mustard starts to sprout, add the finely chopped onions and fry till golden brown.
5) Now add the tomato puree as prepared in step 1 and shimmer for 5-6 minutes.
6) Add the rasam powder and add water to dilute the rasam as per your taste.
7) Boil for 4-5 minutes and then turn off the heat.
8) Add ghee and serve hot with rice.
Tomato Pudding
Tomato Pudding
Ingredients
3 medium sized tomato,
½ cup powdered sugar,
1 tsp salt,
1 pinch baking soda,
3-4 slices bread,
½ cup butter (optional).
Method
1) First de-skin the 3 tomatoes. To de-skin tomatoes, boil water in a sauce pan and add the whole tomatoes. Boil for a few minutes till the skin starts to crack. Once the skin starts to crack take the tomatoes out of the boiling water and put them in cold iced water. Now just peel of the skin.
2) Out of the de skinned tomatoes, puree 2 tomato. De-seed the 3rd tomato and chop it into fine pieces.
3) Now take the breads and cut the brown edges. Dip the bread slices in water and squeeze the water out by pressing with your hand. Place the soft squeezed bread in a bowl.
4) Add the tomato puree and tomato slices as prepared in step2 to the bread.
5) Add the sugar, salt, baking soda and butter to the mixture and mix with a light hand so that the mixture do contain the bread pieces and chopped tomato pieces. Take care that the entire mixture is not grinded to a paste.
6) Now grease a pan and place 3-4 tomato slices to cover the base of the pan. Then pour this mixture over the tomato slices in the greased pan. Microwave this mixture for 30 minutes at 80% power.
7) Refrigerate and serve.
